Move over, sliders. This adorable appetizer is your new favorite way to eat a cheeseburger…oh, and did we mention that they’re totally low carb? When all the fixings are skewered on an appetizer toothpick, you won’t miss the bun.
1 lb. ground beef
1/2 c. plain breadcrumbs
1 large egg
2 cloves garlic, minced
1 tbsp. Worcestershire sauce
1 tbsp. yellow mustard
Freshly ground black pepper
6 slices cheddar cheese, cut into squares the size of your meatballs
6 pieces Bibb lettuce, torn into large pieces
1/3 c. dill pickle chips
1/3 c. cherry tomatoes
- Make slider mixture: In a large bowl, combine ground beef, breadcrumbs, egg, garlic, Worcestershire, and mustard and season with salt and pepper. Mix until fully combined, then form into meatball-sized slider patties.
- In a large skillet over medium heat, heat oil. Cook meatballs until your desired doneness, 12 to 14 minutes for medium.
- Top meatballs with cheddar and cover with lid to melt, 2 minutes.
- Assemble appetizer skewers by layering slider, lettuce, pickle, and tomato.
